    Black-Eyed Peas Fritters: Ghana:
    --Ingredients:
  • 1 cup cooked black-eyed peas
  • 1/2-1 finely sliced onion
  • 1 green chili or 1 tsp chili powder
  • 1 egg

  • --Mashed beans in a bowl. Add onion, chili. Mix until paste is smooth. Add egg, a little, salt. Beat until mixture is frothy. In heavy pan, shallow-fry spoonfuls of the mixture. Turn each fritter once only for a few mins. Serve with tomato chutney, other tomatoe sauce, or peanut sauce.

    Black-Eyed Peas in Coconut Milk: East Africa (Vegan)
    --Ingredients:
  • 1 cup cooked black-eyed peas
  • 1 chopped onion
  • 3 chopped tomatoes
  • 1.5 tsp turmeric
  • 1 tsp chili powder
  • 1 Tbs fresh cilantro/coriander (optional)
  • 1.5 cups coconut milk

  • -- Sauté onions gently until soft and golden. Mash beans, only partially, with fork. Add tomatoes. Mix. Add turmeric, chili, salt, pepper, half cilantro. Pour coconut milk and stir. Cover and simmer for 10 mins. Top with cilantro left. Serve with rice or Dosa: India (Vegan).

    Labaneya: Yogurt Spinach Soup: Egypt
    --Ingredients:
  • 1 sliced onion
  • 2 pounds spinach, cut in strip
  • 1/2 cup rice
  • 2 cup yogurt
  • 2-4 crushed garlic cloves
  • 1 quart (liter) warm water

  • -- Sauté onions in a pot until soft. Add spinach. Cook gently for 10 mins. Add rice, water, salt, pepper. Bring to boil. Simmer 10-20 mins until rice is soft. Take pot off the heat. In another bowl, mix yogurt and garlic. Add yogurt to pot. Stir. Heat gently to warm the soup. Do not boil.

    Glazed Sweet Potatoes: South Africa (Vegan)
    --Ingredients:
  • 1-3 tsp sugar(or honey if non-vegan)
  • 1-2 Tbs raisins (sultanas if possible)
  • 1-2 tsp grated ginger
  • 1 tsp cinnamon
  • juice of a lemon (or a small orange)
  • grated rind of an orange
  • 2-4 sweet potatoes, partially cooked, sliced

  • -- Put a little oil in a heavy pan. Add sugar and raisins. Stir. Add ginger, cinnamon, salt, lemon, and orange rind. Mix well. Add a little water. Add in the potatoes. Stir to coat them. Cook very gently for 5-10 mins, stirring a few times.

    Sweet Potatoe Cake: Malawi
    --Ingredients:
  • 2-4 sweet potatoes, cooked
  • 2-4 tsp honey
  • 1 Tbs sherry or Brandy
  • 1 yolk
  • 1 egg white
  • grated rind of an orange
  • juice of an orange
  • (optional) 1-2 Tbs raisins

  • -- Preheat oven to 400°. Mash the potatoes in a bowl. Add all other ingredients except egg white. Mix well together. Beat egg white until stiff, then fold into mixture. Grease a cake dish. Pour mixture on dish. Cook 45 mins-1 hour, until golden brown.

    Peanut Curry (Vegan):
    --Ingredients:
  • 1 diced onion
  • 1 lb diced tomatoes
  • 1 cup peanut butter
  • 5 cups water
  • 1 lb diced sweet potatoes
  • 1 diced red pepper
  • 1 diced carrot
  • other greens such as cabbage, broccoli, or spinach
  • (optional) fresh cilantro

  • --Sauté the onion with olive oil and some cayenne pepper. Add tomatoes and cook until they begin to release their juice. Add peanut butter and water. Bring to a boil. Simmer until peanut butter is melted. Add potatoes, red pepper, and carrots. Simmer for 30 mins. Add other greens. Cook until they are tender but not mushy. Salt, pepper, cayenne pepper. Remove from heat. Add cilantro. Serve hot.
