--------------- Chinese Potatoe Stew (Vegan)
-- Ingredients:
2 (or 5) chopped garlic cloves
2 Tbs chopped ginger
3/4 lbs potatoes, cut in cubes
2 carrots, cut in 1/2 inch thick slices
1/2 lb green beans
6 oz fresh shitake mushrooms
2 cups water
1/4 cup soy sauce
4 tsp sugar
2 Tbs white wine
-- Sauté the ginger and garlic for 30 sec-1 min in a heavy pan. Add potatoes, carrots, green beans. Cook for
1-2 mins. Add mushrooms. Cook another 1-2 mins. Add water, soy sauce, sugar, and wine. Bring to a boil. Cover and
simmer for 20 mins, until potatoes are tender. Remove cover. Cook on high until almost all the liquid is gone.
Should have about 1/2 inch of sauce left.
--------------- Green Curry (Vegan)
-- Ingredients:
2 to 8 cloves of garlic, chopped
1 to 4 Tbs of finely choped fresh ginger
some olive oil and (toasted) sesame oil (if possible)
2 cups tofu, cut in cubes
2 cups shitake mushrooms, cut in half (you can use other kinds of mushrooms but some, like the portabello, may give
a very dark color to the curry)
1.5 to 3 tsp of green curry paste
2 cups of chopped vegetables, such as broccoli, cauliflower, green onions, eggplant.
1.5 to 2 cups of coconut milk (enough so that it will cover most of the vegetables-tofu)
hand full of chopped fresh basil (or 2 Tbs of dried basil)
1 Tbs sugar
Udon noodles
-- Heat water in a pot for the noodles. Use a wok if possible for the curry, or a deep heavy pan. Put some
(olive-sesame) oil. Heat the pan to medium-high. When pan
is hot, put mushrooms. Sauté for about 3 mins. Then add the vegetables. Turn heat to medium. Cook another 3-4
mins. Add the garlic and ginger. Add more oil if needed. Cook another 4-5 mins. Stir frequently so the garlic won't
burn. Add tofu. Cook another 3 mins. Add the coconut milk. Fill up an empty can of coconut milk half-way with water
and add it to the dish (unless you used low-fat coconut milk which is already cut with water). Turn heat back to
medium-high. When the milk is hot, add the curry. Stir to melt the curry paste completely. When milk is starting
to boil, reduce heat to low. Add sugar and basil. At this point, put the noodles in boiling hot water. Keep
stirring the curry frequently. You may have to reduce the heat on very low. Cook another 8 mins.
