Chinese Potato Stew (Vegan)

Chinese Potatoe Stew (Vegan)
-- Ingredients:
  • 2 (or 5) chopped garlic cloves
  • 2 Tbs chopped ginger
  • 3/4 lbs potatoes, cut in cubes
  • 2 carrots, cut in 1/2 inch thick slices
  • 1/2 lb green beans
  • 6 oz fresh shitake mushrooms
  • 2 cups water
  • 1/4 cup soy sauce
  • 4 tsp sugar
  • 2 Tbs white wine

  • -- Sauté the ginger and garlic for 30 sec-1 min in a heavy pan. Add potatoes, carrots, green beans. Cook for 1-2 mins. Add mushrooms. Cook another 1-2 mins. Add water, soy sauce, sugar, and wine. Bring to a boil. Cover and simmer for 20 mins, until potatoes are tender. Remove cover. Cook on high until almost all the liquid is gone. Should have about 1/2 inch of sauce left.
